Product overview
Designed for an informed trial.
ProEnzyme supplies papain-based meat tenderiser in powder and liquid formats. The best choice depends on how the processor adds and distributes the enzyme. Powder can suit dry blends and premixes, while liquid can support metering into marinades or brines. Papain can act on muscle and connective-tissue proteins, but too much activity or contact time can create an overly soft texture. Every process should therefore be tested against cut, thickness, temperature, pH and cooking conditions.
- Two formats for different plant and recipe needs
- Plant-derived protease for controlled texture development
- Suitable for trial work in marinades, brines and tumbling
- Technical guidance focuses on even distribution and endpoint control

Product FAQ
Before you qualify a grade
What does the TU activity figure mean?
TU is an activity result, not simply a percentage of papain. Compare grades only when the test method, sample basis and reporting units are the same. ProEnzyme confirms these details in the specification and COA.
How do I choose the right activity?
Start with the substrate, pH, temperature, contact time, batch size and target result. A controlled trial normally gives a better answer than choosing the highest activity number.
Can ProEnzyme support commercial supply?
Yes. ProEnzyme is a papain producer and supplier. Share your grade, volume, destination country, packaging and documentation needs so availability can be confirmed.
